On The Table: Easy Banana Bread

I can't help but bake my way through a snowstorm.  With the snow piling up outside, all I wanted to do was stay inside and watch the snow fall. I love the way an oven warms up the house and fills it with the scent of freshly baked bread. In addition to making myself a big ole batch of spiced rum and apple cider in a crockpot I whipped up a loaf of this delicious banana bread with some very browned bananas that were on their way to getting tossed out. But the browner the banana, but better the bread.


The thing I love about this recipe is that it’s super duper simple and it's also dairy-free and egg-free, making this one boyfriend approved.


You'll need:

3 ripe bananas, mashed
1 cup white sugar
1/2 cup melted earth balance butter
1 1/2 cups flour
1.5 tsp baking powder
1 teaspoon salt
Sea salt to sprinkle on top (optional)


Directions

  1. Preheat the oven to 325 degrees and grease a 9x5 inch loaf pan.
  2. Combine the bananas, sugar, and melted butter in a bowl, stir.
  3. In a separate bowl mix the flour, baking soda and salt, stir.
  4. Combine both mixtures and stir until combined. 
  5. Pour the batter into the prepared loaf pan and sprinkle with sea salt.
  6. Bake for for 1 hour, until a toothpick inserted in the center of the bread comes out clean.
